A pinch hing

Cumin seeds- ½ tbsp

Instructions


Pressure cooking the dal


1. Wash the dal properly under cold water
2. Soak the dal at least for 30 minutes
3. After 30 minutes, rinse the water from the dal
4. Take a pressure cooker to add dal, water, and turmeric powder
5. Cook the dal at least for 3-4 whistle
6. Let the pressure release by itself and then open the lid
7. Mash the dal with the help of blender to make it smooth

Making varan dish


1. Add the salt and jaggery into the dal and add extra water if required to maintain consistency.
2. Simmer the dal on a medium heat one more time
3. Heat the mixture for the 3-4 minutes

Making of tempering


1. Take a small pan and heat the ghee on a medium heat
2. Add cumin seeds in it wait until it started to crackle

For Tadka



Ghee- 1 tbsp
Dried red chilli- 1
Kashmiri red chilli- ¼ tbsp
Coriander- 1 tbsp

Instructions

1. Pressure cook the dal by adding toor dal, turmeric, salt, Oil, 3 cup water and cook it for 5 whistles.
2. Make pressure settle down on its own and mash the dal using a whisk
3. Take a kadai and heat the ghee and splutter cumin and pinch a hing
4. Now add garlic, chilli, ginger paste and sauté it well
5. Also add turmeric, chilli powder and sauté it on low flame
6. Now add pressure cooked dal and mix well
7. To adjust the consistency add ½ cup of water, add more if required
8. Simmer the dal for 2 minutes until dal absorbs flavour
9. Now add 2 tbsp coriander and 1 tbsp lemon juice and mix well
10. For tadka heat, the 1 tbsp ghee and sauté the garlic and dried chilli in small kadai
11. Turn off the flame and add chilli powder & coriander
12. Pour the tempering over the dal and mix well

  3. Let it aside to make it cool and blend to coarse powder without adding water.
  4. Take another Kadai heat ghee and splutter mustard, cumin, hing, dried red chili, few curry leaves and 3 cloves of garlic.
  5. Saute it well until tempering start splutter.
  6. Now add the prepared spice mix and saute it until spices turn aromatic
  7. Add tomato, tamarind, chili, turmeric, and salt and mix well.
  8. Add the cover and boil it for 10 minutes.
  9. Now add 2 cup of toor dal, 1 cup of water and adjust consistency.
  10. Boil it for 2 minutes until rasam turns frothy.
  11. Finally, add coriander and severed with hot rice.

  1. Wash the toor dal properly and soak it for 30 Mins
  2. Now take a pressure cooker to add dal with 3.5 cups of water  and add salt, turmeric, coriander, and chopped garlic
  3. Cook the dal on medium heat a least for 1-2 whistle and then turn off the heat
  4. Now, in a small pan heat the oil, add mustard seeds, ½ cup of cumin seeds and hing
  5. Add remaining garlic and give it a stir. Once it turns to brown color add onion and fry them till they turn pale down.
  6. Now add tomatoes and pinch a salt to soften the tomatoes
  7. Add green chilies and cook the mixture till tomatoes start leaving oil. Now add this mixture to the dal followed by 1 cup of water and adjust the water as per the desired consistency of the dal.
  8. Cook the dal until it starts boiling by uncovering it
  9. Apart from that prepare the tempering for the recipe. In a small pan adds ½ tbsp cumin seeds, once seeds crackle adds red chili powder and turn off the flame.
  10. Add the tempering to the simmered dal and turn off the heat

3. Once seeds started splutter then add kasoori methi and onion and cook it until translucent. Add ginger paste and cook it further for one minute
4. Add tomatoes and all the powders and salt as required and cook till tomatoes become mushy
5. Now add the soaked dal, mix well and coat it with spices
6. Add ½ cup water, close the lid and cook it for 3 whistles on a high flame and lower the flame and cook for more 1 whistle
7. Let the pressure of the cooker release on its own and then open the lid, add yogurt and cream into it and garnish with coriander leaves.
